Here are some of the recipes I've been given so far. Unfortunately, none of the ingredients have amounts, as the general idea is to add things until you get the taste right, so trial and error is the way forward I'm afraid!!

TOMATO PICKLE (this is my favourite dish!)

Ingredients - Garlic, Ginger, Onions, Tomatoes, Green chillie, Turmeric powder, Salt, Oil


- Heat the oil, then fry the onions until a little brown, and add the turmeric

- Chop the garlic, ginger and green chillies, and add to the pan, frying until brown

- Chop tomatoes and add to the pan, along with salt

- Cover and simmer on a low heat

- Leave until the tomatoes are soft and the skin separates - DON"T ADD WATER!

- Shake and mix, and serve as a side dish to rice


DAL BAHT (this is the lentil soup that accompanies most meals)

Ingredients - Lentils (black, red, whichever!), Garlic (small amount), Onion (small amount), Ginger (small amount), Tomatoes (small amount), Turmeric powder, Coriander, Butter/ghee, Cumin seeds



- Soak the lentils for some time

- Chop the onion, garlic, ginger etc

- Heat the butter, and add the cumin seeds, heating on a low flame

- Add the turmeric

- Add all of the chopped stuff and fry for some time on a low flame

- Add the soaked lentils and fry

- Add salt, and water to required thickness

- Add to the pressure cooker for 10 mins on (and I quote) "2 pressure"? (Not sure what this means, as I've never used one, but maybe somebody can enlighten me?)

- Cook on low for another 10 mins

- Mix, and add more water if necessary, but if you do add more water, bring to the boil again to maintain the flavour!



Ingredients - Radishes, Mustard Oil, Green chillies, Cumin seeds, Turmeric, Salt, (Sesame powder if wanted).


- Clean, peel and grate the radishes

- Add salt

- Add sesame powder if wanted (1 or 2 spoons)

- Heat the oil and add the green chillies

- Add cumin seeds and turmeric

- Once warmed, add to radish

- Mix in green peas, chopped onion, ginger, beansprouts etc to taste if you wish!



Ingredients - Green soya beans, Onions, Cumin seeds, Garlic, Ginger, Coriander, Tomatoes, Turmeric powder


- Fry onions and cumin seeds

- Add soya beans and fry

- If you want it a bit thicker, you can add boiled potato

- Add the garlic etc

- Add water to make gravy, and thicken but make sure you let it boil first to ensure the soya beans are properly cooked!


There you go, just a few, but these are my favourites from what we have eaten so far! Hope someone manages to make them, and can come back to me on how much of everything to use, as Dr Renu wasn't that sure!! Oh, and if you really want to get into the Nepali way of eating, mix it all together with your hands, and use them to eat with! Very messy, and not something we've tried as yet!
